Red Potatoes on the Grill

I love these red potatoes in the foil packet.

I am one of those Americans that like steak and potatoes!

I love potatoes in any shape and form.

How to Grill Red Potatoes in a Foil Packet:

  1. Use an about 18″ piece of foil.
  2. Place chopped potatoes, butter, salt and pepper in the middle of the foil.
  3. Roll up the edges on the foil to create a packet.
  4. Place on the top rack of the grill for about 45 minutes with the grill on high.

Lemon Lime Porkchops

If you haven’t noticed by now but I LOVE to grill…

I doesn’t even have to be summer time, I have been known to grill in the middle of winter (with several inches of snow on the ground).

However, sometimes chicken gets a little boring and I’ll be honest I can’t afford to have steak every night, that’s when I bring in the pork chops. Pork chops are another great alternative.

Oh such an amazing meal!


  • 4 pork chops
  • 1/2 cup lemon juice
  • 1/2 cup lime juice
  • 1 tsp. garlic powder
  • 1/2 tsp. ground cumin
  • 1/2 tsp. red pepper flakes
  • 1/2 tsp. ground chili powder


  1. Combine all ingredients into a Ziploc baggie.
  2. Marinate for at least 4 hours (the longer the better).
  3. Grill until slightly pink in the middle (about 4 to 8 minutes per side).

How to Boil Corn on the Cob…

I try not to assume that people know how to cook (even the simple things)…

I have relatives, I won’t say any names, that can barely boil water for noodles.

Here is how I cook corn on the cob…unfortunately I haven’t mastered how to cook it on the grill.

How to Boil Corn on the Cob…

  1. Bring a pot of water and 2 tablespoons of sugar to boil, make sure there is enough water to cover all of the corn.
  2. Add ears of corn to boiling water and cover.
  3. Cook for 5 minutes.

Yes it is that easy!

Not everyone knows how to cook. To some, even the simple things  can seem so trivial.

One of my favorite summer activities is grilling. I love to cook all of my food on my grill…

Here is how to bake a potato on a grill.

How to Grill a Baked Potato…

  1. Clean potatoes
  2. Poke holes into each potato with a fork
  3. Wrap in aluminum foil
  4. Place on the top rack of grill for 45 minutes.

It’s that easy my friends!

Italian Dressing

Italian dressing is great on salads or makes a great marinade.

I love to a good steak that has been marinade in Italian Dressing!

Add some corn on the cob, baked potato and a garlic bread and it makes an amazing steak even more amazing!

Italian Dressing Ingredients:

  • 1 & 1/2 tsp. garlic powder
  • 1 tbsp. onion powder
  • 2 tbsp. oregano
  • 1 tbsp. dried parsley
  • 1 tbsp. sugar
  • 2 tbsp. salt
  • 1 tsp. pepper
  • 1 tsp. ground basil
  • 1/4 tsp. ground thyme
  • 1/2 tsp. dried celery


  1. Mix all ingredients in a air tight container.
  2. Use 2 tbsp. of Italian Dressing mix, 1/4 cup vinegar, 2 tbsp. water and 2/3 cup olive oil.
  3. Marinade a steak for at least an hour (longer is better), grill as long as desired.

Sweet BBQ Chicken!

I’m in love with my grill…like I forgot how much I loved grilling until I’ve gone through a very long winter and haven’t been able to grill. I have a very strong feeling that my oven won’t be used very much this summer…

I did not make the noodles or the bread…I did cook the bread on the grill (which is quite amazing).

I tend to make a few of these and throw them in the freezer and just thaw it when I want to grill some BBQ chicken. Yes, I am lazy like that.

  • 2 Chicken breast
  • 12oz bottle of Open Pit Original BBQ Sauce
  • 1/2 cup brown sugar
  • 1/2 cup vinegar
  • 1/4 tsp. paprika
  • 1/4 tsp. cumin
  • 1 tsp. garlic powder


  1. Mix all of the ingredients into a Ziploc bag.
  2. Marinade overnight (at least 1 hour).
  3. Grill until  no longer pink in the middle.

Lyndsey’s Amazing Meatloaf

Amazing is in the title, therefore it must be amazing!



  • 2 lb lean ground beef
  • 1 box of Stouffers Chicken Stuffing
  • 2 cans Campbell’s Beef Gravy
  • 2 egg
  • 1 cup(ish) water


  1. Cover two cookie sheets with aluminum foil, for easy clean up!
  2. Mix ground beef, stuffing, one can of beef gravy, eggs and water. I fill the gravy can with water…it’s about 1 cup if you want to be technical.
  3. Make four mini loaves on two cookie sheets, making indent on top of each loaf.
  4. Use over can of gravy on top of each loaf.
  5. Bake at 350F for about 60 minutes.
